Anzac Biscuits

Extracted from, The Australian Women's Weekly's

"The Big Book of Beautiful Biscuits".

• 1 cup rolled oats

• 1 cup plain flour

• 1 cup sugar

• ¾ cup coconut

• 125g (4oz) butter

• 2 tablespoons golden syrup

• ½ teaspoon bicarbonate of soda

• 1 tablespoon boiling water


1. Combine oats, sifted flour, sugar and coconut.

2. Combine butter and golden syrup, stir over gentle heat until melted.

3. Mix the baking soda with the boiling water and add to melted butter mixture.

4. Stir into the dry ingredients.

5. Place teaspoons full of mixture onto lightly greased oven trays; allowing room for spreading.

6. Cook in a slow oven for 20 minutes at 150 C / 300 F

7. Loosen while warm then cool on trays.

Makes about 30 biscuits
